Hello,

does anyone know if the Polish, Ukrainian, Finnish, Armenian rifle battalions had coloured "national" shoulder boards ?

The only ones i'm aware of are the crimson shoulder boards worn by the Georgians .

Shoulder boards national colors were not. Often retain the colors adopted in the Russian Imperial Army:
Guard infantry - red shoulder boards
infantry units - crimson shoulder boards
Grenadier units - yellow shoulder boards

Army Infantry - at the place regiment in the division:
1st and 2nd regiment of the division - had scarlet shoulder boards;
3rd and 4th regiments - blue shoulder boards.

But there may be individual colors - you need to look for sources of each specific military unit.
